Method
- Place cubed watermelon in a single layer on a parchment-lined baking sheet. Freeze until the watermelon is firm, about 4 hours or overnight.
- In a small saucepan, add the sugar and water. Cook over medium heat until the sugar dissolves. Remove from heat, then stir in lemon juice and let cool completely.
- Add the frozen watermelon and the cooled simple syrup to a high-powered blender. Puree until smooth.
- Pour into cups and enjoy with a spoon or straw.
