Watermelon Slushie

Ingredients
  

  • 7 cups seedless watermelon cut into cubes
  • ¼ cup granulated sugar adjust to taste
  • 5 tablespoons water for simple syrup
  • 1 large lemon juiced, or 2 small lemons

Method
 

  1. Place cubed watermelon in a single layer on a parchment-lined baking sheet. Freeze until the watermelon is firm, about 4 hours or overnight.
  2. In a small saucepan, add the sugar and water. Cook over medium heat until the sugar dissolves. Remove from heat, then stir in lemon juice and let cool completely.
  3. Add the frozen watermelon and the cooled simple syrup to a high-powered blender. Puree until smooth.
  4. Pour into cups and enjoy with a spoon or straw.
