Ingredients
  

  • 2 ½ teaspoons superfine sugar or simple syrup, see notes
  • 1 ounce freshly squeezed lime juice freshly squeezed, not bottled
  • 6 pieces of watermelon divided, seeded, and cut into 1-inch cubes (use fresh watermelon)
  • 10 mint leaves divided (fresh mint for best flavor)
  • 3 ounces white rum use a quality rum
  • Club soda or sparkling water for topping

Method
 

  1. Place sugar and lime juice in a highball glass and stir until the sugar dissolves.
  2. Add 3 pieces of watermelon and 5 mint leaves to the glass. Muddle gently 3-4 times to release flavors.
  3. Fill the glass with ice, pour in rum, and top with a generous splash of club soda. Gently stir to combine.
  4. Garnish with the remaining watermelon cubes and mint leaves for a refreshing touch.
