Ingredients
  

  • 4 medium sweet potatoes about 5 cups mashed, peeled after baking
  • cup unsweetened vanilla non-dairy milk such as almond or soy milk
  • 1 teaspoon pure vanilla extract for flavor depth
  • 2 tablespoons smooth almond butter can substitute sunflower seed butter for nut-free option
  • 2 tablespoons pure maple syrup adds natural sweetness
  • ½ teaspoon ground cinnamon adjust to your taste
  • 2 tablespoons ground flax seeds for a boost of fiber and omega-3s

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Scrub the sweet potatoes with a veggie brush and arrange them on a baking sheet lined with foil.
  3. Roast for about 45 to 60 minutes, or until they can be easily pierced with a fork.
  4. Allow the potatoes to cool, then carefully peel off the skins and transfer the flesh to a large mixing bowl.
  5. Add the vanilla extract, almond butter, maple syrup, cinnamon, and ground flax seeds to the sweet potato flesh.
  6. Use an electric mixer to beat the mixture until it’s fluffy and smooth.
  7. Serve immediately or reheat on the stove if chilled.
  8. Transfer to bowls and top with fresh fruit, granola, or an extra sprinkle of cinnamon.
