Method
- Bring the filtered water to a boil in a teapot or saucepan.
- Add the rooibos tea to the boiling water and steep for 5 minutes.
- Strain the tea through a fine mesh strainer and let it cool to room temperature.
- Refrigerate the tea for about 1 hour until it’s completely chilled.
- To assemble the iced tea, fill glasses with ice and pour the chilled tea into each glass, about three-quarters full.
- Stir in a few tablespoons of strawberry simple syrup to taste, adding more if desired.
- Garnish with fresh strawberry and lemon slices, then serve immediately.
