Ingredients
  

  • ¼ cup feta cheese crumbled (adds a salty, creamy texture)
  • 1 large egg fresh and room temperature for best results
  • ¼ teaspoon black pepper freshly ground
  • Pinch of red pepper flakes optional, for heat
  • 1 corn tortilla or flour tortilla, based on preference
  • ½ avocado sliced, for creamy texture
  • ¼ cup microgreens or arugula fresh greens for garnish
  • 1 teaspoon olive oil for drizzling

Method
 

  1. Spray a medium skillet with nonstick spray or rub it with an oiled paper towel. Heat the skillet over medium-high heat until hot.
  2. Sprinkle the crumbled feta into the shape of a ring, like a donut. Let it cook for 1-2 minutes until it begins to soften.
  3. Crack the egg into the center of the feta ring. Sprinkle the egg with black pepper and red pepper flakes. Cook uncovered for 3-5 minutes, until the egg whites are set but the yolk is still runny.
  4. While the egg cooks, heat the tortilla over a gas flame or broil it in the oven for 15-20 seconds on each side. You can also toast it in a dry skillet.
  5. Spread the avocado slices evenly over the warm tortilla. Toss the microgreens or arugula with a drizzle of olive oil, then layer them over the avocado.
  6. Once the egg is ready, carefully lift it from the skillet with a thin spatula and place it on top of the prepared tortilla. Serve immediately.
