- Spray a medium skillet with nonstick spray or rub it with an oiled paper towel. Heat the skillet over medium-high heat until hot.
- Sprinkle the crumbled feta into the shape of a ring, like a donut. Let it cook for 1-2 minutes until it begins to soften.
- Crack the egg into the center of the feta ring. Sprinkle the egg with black pepper and red pepper flakes. Cook uncovered for 3-5 minutes, until the egg whites are set but the yolk is still runny.
- While the egg cooks, heat the tortilla over a gas flame or broil it in the oven for 15-20 seconds on each side. You can also toast it in a dry skillet.
- Spread the avocado slices evenly over the warm tortilla. Toss the microgreens or arugula with a drizzle of olive oil, then layer them over the avocado.
- Once the egg is ready, carefully lift it from the skillet with a thin spatula and place it on top of the prepared tortilla. Serve immediately.
